    How we choose where you eat

    We choose where you eat as carefully as what you eat. Some dishes belong at a specialist counter; others need time at a proper table. We also choose for your pace, the weather, and what you have asked us to avoid. Hanoi changes daily, so a confirmed proposal may name a different suitable kitchen than the one we first had in mind.

    Hanoi doesn’t eat in one kind of place.

    A good bowl may come from a street-side specialist, a small local eatery, a market morning, a seated restaurant, or a café. We use the setting that serves the dish and the hour — not a single “street food” costume for every tour.
